A colorful slaw is the perfect addition to a potluck or food centered get together! I mixed things up in this healthy slaw using purple cabbage, apples, and carrots. Paired with tahini dressing for a slightly nutty flavor.

This Apple Carrot Cabbage slaw is easily vegan and gluten-free. There is also no added sugar — using maple syrup to sweeten.

Apples

This fall fruit is rich in antioxidants and fiber. The sweet flavor and crunchy texture are just the right addition to this slaw.

Carrots

Carrots get their orange color from the beta-carotene they contain — an antioxidant that converts to vitamin A in the body. Eating carrots is thought to be beneficial to the eyes, heart, gut, and more.

Purple Cabbage

There are a ton of nutrients in purple (or red) cabbage! It is a good source of vitamins C, A, and K. Plus it is a beautiful color.

Tahini

Add some healthy fats to the mix with tahini. Tahini is a paste made from toasted sesame seeds — similar to peanut butter. It is a staple in many diets around the world. Tahini contains over 6 grams of unsaturated fats and nearly 3 grams of protein per tablespoon. It is also a good source of copper and other minerals.

Yogurt

Plain yogurt will nicely balance the flavors in this slaw. It also contains probiotics to boost gut health. Aim to use a low sugar yogurt — some varieties are loaded with sugar. You can sub for mayonnaise or sour cream in a pinch — vegan if needed.  

Lemon Juice

Every dressing needs a little tang! Lemons are also a great source of vitamin C.

Maple Syrup

Apple Carrot Cabbage Slaw

This colorful slaw is the perfect addition to your next potluck!

Ingredients

  • 2 apples
  • 2 carrots
  • 1 small head purple cabbage or 1/2 large head
  • 1/2 cup tahini
  • 2 tablespoons plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons spicy brown mustard
  • 1 teaspoon maple syrup
  • 1 teaspoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  • Rinse carrots, apples, and cabbage well. Cut into small strips and mix in a medium-sized bowl.
  • Make the dressing by mixing tahini, yogurt, lemon juice, mustard, maple syrup, apple cider vinegar, salt, and pepper together.
  • Mix the dressing into the bowl with the carrot, apple, cabbage mix.
