Dates

These energy bites are naturally sweetened with dates! Dates are low glycemic and packed with goodness — including plenty of antioxidants, potassium, and fiber.

Rolled Oats

Add protein and fiber with rolled oats. One half cup of rolled oats contains roughly 5 grams of fiber and 6 grams of protein. This will help keep you feeling full and energized!

Walnuts

Walnuts contain healthy unsaturated fats and omega-3 fatty acids. They are also a good source of fiber and protein. 

Coconut

I love the flavor of coconut! Plus coconuts contain medium-chain triglycerides (MCTs) that are thought to be beneficial to weight loss and brain function

Lemon

Citrus is in season and I am taking advantage! Lemon is one of my favorite flavors. I am a big fan of sour treats, and lemons contain loads of vitamin C to help with immunity.

Dairy-Free Milk

This recipe uses a touch of dairy-free milk to help pull everything together. You could probably sub water in a pinch.

Flax Seeds

Flax seeds are filled with nutrients. They are a good source of omega-3 fatty acids and also contain lignans — which have been researched for their ability to prevent cardiovascular disease and cancer.

Vanilla Extract

Adding vanilla extract adds a bit of vanilla flavor to these bites. Vanilla has antibacterial properties and contains antioxidants to help rid your body of toxins. It is also thought to be beneficial when battling depression.

Turmeric

This healing spice has long been used medicinally by Asian cultures. Turmeric has been studied for its antibacterial, antiviral, anti-inflammatory, antitumor, antioxidant, antiseptic, cardioprotective, hepatoprotective, nephroprotective, radioprotective, and digestive activities. 

Black Pepper

Add a pinch of black pepper anytime you use turmeric to help your body absorb the curcumin (chemical that gives turmeric its healing powers). The piperine in black pepper will help you absorb curcumin up to 2000% more effectively.

Lemon Coconut Energy Bites

These zesty bites are filled with energizing nutrients for a quick boost.

Ingredients

  • 10 Medjool dates pits removed
  • 1/2 cup rolled oats gluten-free if needed
  • 1/2 cup walnuts
  • 1/2 cup unsweetened shredded coconut plus more for topping
  • Juice from 1 lemon about 2 tablespoons
  • Zest from 1 lemon about 1 teaspoon
  • 2 tablespoons dairy-free milk
  • 2 tablespoons flax seed meal
  • 1 teaspoon vanilla extract
  • 1 teaspoon turmeric
  • 1/8 teaspoon black pepper
  • Sunflower seeds optional for topping

Instructions

  • If your dates are dry, soak in warm water for a few minutes until slightly soft and sticky.
  • In a food processor or powerful blender mix together all ingredients until well-combined.
  • Scoop a rounded teaspoon and roll mixture into a bite-sized ball. Repeat until all the mixture is used — you should have roughly 25-30 balls.
  • Roll balls in extra shredded coconut, sunflower seeds, or enjoy as is. Store in an air-tight container in the refrigerator for up to 5 days or the freezer for up to 1 month.
